Day in the Life | Week 3

There was a bunch of birthday celebrating going on at our house this past week. With that came dining out and I'm happy to say that I was more than pleased with the options. Dinner number one was at Rainforest Cafe at Mall Of America. They don't have a gluten-free menu, instead they send out the chef to discuss menu options that you have. He was knowledgeable about ingredients and helped our family make great choices. He even hand-delivered the food to our table to make sure we had the correct items.

The next day we were at our family favorite spot Benihana. They used gluten-free soy sauce for us with no problem, left out the fried onions in the soup, brought a different salad dressing for the salads, and left the teriyaki off the beef. Best part, the shrimp sauce there is gluten-free! It is our favorite. I'm sure it may have a little bit of sugar in it but hey like I said nobody's perfect :-).

Confession time: I gave in and had some fried rice. I limited my portion to a very small amount.  I now know why I typically practice what I preach because for me, carbs can be a slippery slope.  I found myself craving them after eating that rice.  I know my body was saying "what the heck are you doing to my blood sugar"!  It was a good lesson for me and just confirmation that I don't like the way I feel when I eat them.  Rice is a pretty benign grain to eat if you are going to consume but it is still high in carbs and I personally just don't handle it very well.  I stay true to believing that grain free is the way we should live our lives.  I also realize that we are all human and there will be times where we make choices like these.  The difference is knowing and listening to how your body reacts when ingesting.  I went as far as to buy a glucose meter awhile back just to see how my body was handling my food.  I know that spiked insulin levels are good for no one, so for me I just needed to see the numbers for myself.  I tested when I got home from eating the rice and sure enough I was at 135.  Some would say that is not very high but when I typically have a non fasting blood sugar of 75 that is high!  Insulin increases the storage of fat in fat cells and prevents the cells from releasing it for energy. I want to be a fat burner not a glucose burner. 


DAY IN THE LIFE

8 am
I start my day with my warm lemon water.  It's something I make myself do every morning before getting my first cup of coffee.  The health benefits are amazing and it's a great way to start your day.  Bullet Proof Coffee for me this morning cuz I need major energy and no time to stop to eat.  Coffee, coconut oil, unsalted grass fed butter, heavy cream and Swerve.  I won't be hungry until well after noon after blending this yumminess up.  As we said in the 80's "Don't knock it till you have tried it".  Haha!

Noon
Thought I'd share with you what a school lunch looks like for Jon.  I use a Planet Box and it has been a life saver and time saver.  No messing with plastic containers, easy to see what you have packed so that it's balanced and it's dishwasher safe.  Today's lunch is gluten free deli turkey, cheddar cheese sticks, cherry tomatoes, pistachios, peanut butter egg and what Tom calls "stinky armpit salad".  This is a must make and don't let his silly humor scare you away. It's really called Tequillaberry salad.  A local restaurant that used to be known for it, and every time we ate there Tom gave me a hard time about it.  It's the smell of the cauliflower I think :-)  Here is the recipe:
2 lbs salad mix
1 cup mayo
1/4 cup Swerve
1/4 c whipping cream
1/2 cup Parmesan cheese
1 lb bacon (cooked and crumbled)
1-2 c cauliflower (tiny pieces)
Mix together the mayo, sugar, whipping cream and Parmesan cheese.  Pour over lettuce and mix well.  Then stir in bacon and cauliflower.  Let sit 15 mins before serving. 

 

3 pm
Lasagna making afternoon.  I'm not environmentally friend I know, but I love the convenience of the tin disposable pans.  I usually triple this batch because honestly it's not any more work to do that.  Freeze 2 of them and have one for dinner.  Maria's Protein Lasagna made with Mario Batali sauce is so yummy.  I buy all ingredients at Costco and put it together pretty inexpensively. I do all beef in mine.    

5:30
Lasagna made, so I feel like I have the night off cooking.  This is one meal that everyone enjoys.  I don't get any gripes from anyone.  With three little ones, someone is usually complaining about something.  Exhausting but I know tonight we will sit down to a great family dinner with only requests for seconds.  Topic of discussion tonight with the boys is "Why does Dad always want to kiss you".  Soo funny.  Oh, and then Jon had to share with us how a classmate puked all over the rug and on his friends hand today at school.  Never a dull moment. 
 

WORST AND BEST
Worst part of my day was having to have a conversation with someone that wasn't positive.  It was completely out of love and I felt that I had to share with this person feedback going around in order for their mission to succeed.  Not a comfortable place to be in, but if people were saying negative things about the way I was doing business I would hope that someone would share that with me so that I had the opportunity to make it right.  I'm a firm believer in sharing your issues with someone if appropriate so that redemption can be made if possible.  A hard conversation but God walked me through it. Leaving it at HIS feet tonight.

Best part of the day was playing UNO with Sam and watching him continue to draw cards just to draw the game out longer.  I think he had about 5 Wild cards in his hands he could have used.  So cute.  UNO is the new favorite game and I'm not complaining cuz they are even choosing it above the Wii!!!

Day in the Life | Week 2

Thank you for all of the positive feedback on the new direction of the blog. Through you sharing my link on Facebook with friends I was able to connect with a few new people doing this way of life. It feels great to be in the same company. Let's face it some people look at us like we are absolutely crazy for eating this way. I know that I am totally blessed to have some of my dearest friends and family choosing to eat this way and make changes in their nutrition. Something our family has done, is get together with other families to try new recipes and have a completely grain and sugar free dinner together. I also love to cook for people that don't eat the way we do and show them how great the food we eat truly is. There isn't the deprivation that people automatically assume when they hear grain and sugar-free. Isn't it crazy how many great recipes there are online. I love to look through your Pinterest boards of grain and sugar-free recipes. I don't think I have yet to find a recipe that couldn't be made healthy (oh, and still taste good :-)

DAY IN THE LIFE

8 am
"Boys what do you want for breakfast?"  I get a response from Sam "eggs and one of Grandma's muffins" and from Jon, "Dad's cereal in my blue bowl".  Blue bowl is a super cool bowl our friend Megan bought that has the straw attached to drink the milk, Dad's cereal is "Dad's cereal" because it's what he eats every singe day and Grandma's muffins are her specialty muffins that she has down to a science, they are doughnut muffins and delicious.  Pretty simple requests.  I eat eggs almost daily fried in coconut oil, so I have those on hand and remember last week I 8x the batch of cereal so that is in cupboard.  Luckily Grandma gave us a big batch of muffins to accommodate Sam's request.    (I don't  recommend using Splenda as author of recipe suggests in muffins :-)

Noon
I'm pumped that I get leftover broccoli salad for lunch.  It is AMAZING! Super easy to make too.  The boys are having grass fed hot dogs (no buns, but they never ate them anyway), cut up veggies with Wheat Belly ranch dressing, string cheese and watermelon from Costco.  Yes, I let my kids have fruit daily.  They can handle carbs better than adults can.  I limit myself to berries once a day, if that.  But I'm not going to lie to you, I tasted (ok gobbled up) some of this delicious watermelon as I cut it up.  It tasted super sweet, but then again everything does when you don't consume sugar anymore.  It's nice to be able to truly taste your food now.  I tasted and enjoyed, and I will now let the rest go to my family. Way too many carbs for me.

3 pm
Spent the afternoon chasing Isaac around.  He has an obsession with our dogs food.  He eats it whenever he gets a chance and hand feeds it to our oldest dog Bear.  "A piece for me, a piece for you" kind of thing.  I was freaking out one day on Tom that I try so hard to keep wheat out of my kids diet and then my baby is eating dog food.  Well...Tom read ingredients on our last bag and NO WHEAT in it!! It's not grain free (brown rice and oatmeal) BUT NO WHEAT!  Maybe that is why my dogs have lived healthy lives and are still kicking at 13 & 14. You can roll your eyes at me but you know I think modern day wheat is the devil :-)  We have fed them this food since they were tiny.  I always gave Tom a hard time about the amount of money he spent on dog food.  Sorry honey! Worth every penny for their health.

Spring is FINALLY here in Minnesota!  I promised the boys a picnic at our favorite playground.  Dinner was, rotisserie chicken, salsa, blue organic non gmo corn tortilla chips (insert gasp
here :-), cut up veggies, watermelon and juice boxes.  It's not a picnic to my boys without juice boxes.  I researched the shelves for the best natural product with the least amount of sugar and I came up with Fruitables.  Natural fruit and veggies and 6 grams of sugar.  I can live with that for occasional picnics.  I'm not a complete nazi :-) As for the blue organic corn chips, another special treat.  Not a staple in our home anymore but an ocassional treat for kiddos. Again, too many carbs for this lady! See, I'm not perfect and some "experts and die hard followers" would poo-poo me for including both the juice boxes and corn chips but I'm being real with you and yes, I do give these things to my kids ocassionally.  However I in no way promote it on a daily basis!!  No One needs all that sugar!  And yes, carbs=sugar so the chips are loaded with sugar! My kids burned a lot of that glucose off at the park so that helps too.  For more about how our bodies handle that sugar and starch this is a great video. It's a video I wish everyone in America would view!



WORST AND BEST
Worst part of my day was hearing my almost 6 year old tell me that he wrote in his diary that he hates when him mom yells at him :-(  Broke my heart.  It's something I need to work on but when I've asked you to brush your teeth 10 times, my nice voice often gets a little louder and harsher.  Any which way I don't want to be a family that yells so I need to work on better ways to get kiddos to listen to me.  Magic solutions, welcome please! It was a great gateway for a conversation about how we can better work on things though. 

Best part of the day was watching my husband push his boys on the swing and play along with "live Mario Kart" in the park.  I even got to participate but of course, I was instructed that I had to be Princess Peach. That's ok I like to be a princess sometimes. Blessed!

Day in the Life | Week 1

I spent a day this week with an amazing woman who inspired me and gave me some great direction. God doesn't make mistakes when he puts people in your life.  A Godly, inspirational woman. Thank you Gina!!

I want to start by saying that I fully understand that this change of life can feel overwhelming. I want to take you on my daily journey and hope that you can grab some ideas to help you understand and apply why We Chose This :-)

I will be starting to do a day-in-the-life of my little family. Posting information of our meals, challenges and big wins for the day, seasoned with some tid-bits of information. I want you to see our real everyday, because I want to encourage you that you can do it too and I want you to know we aren't perfect, but taking one day at a time. I don't want you to think I am super mom because I am not! I have had people say "I could never do what you do, I simply don't have the time or knowledge"

 I did not get to where I am overnight and I still have a long way to go!  It's been a huge learning curve.  I also don't want you to feel like a bad person or parent if you don't do everything perfectly.  We feel guilt in our life in so many areas and that will not move you closer to change and if it maybe does, it will only make you resent it.

Any changes you make for yourself and family are beneficial and I am confident that God will bless you for your efforts.  Maybe this week it's researching what High Fructose Corn Syrup is and making a decision not to buy a single product with it in it or it's deciding that you are going to start to empty your cupboard of products with wheat in them.  I'm here to encourage you in any way I can to live this life of health!!! It's not about perfection!

DAY IN THE LIFE

8 am
"Mom, I want pancakes. I pulled out our go to Protein Pancake recipe. These stick with you. The first morning I fed these to Jon he didn't hardly touch his lunch. He normally gobbles lunch up but his lunchbox came home full. He said he wasn't hungry at lunch (12 noon) only took me a second to remember what was for breakfast. Crazy amount of protein in them. I always double this recipe and freeze. Topped them with lots of butter and Natures Hallow Xylitol syrup (cheapest prices at http://www26.netrition.com/ Yummy)

Noon
We are still pretty full from breakfast but Sam requests salami, string cheese, apple slices and a cucumber. I'm horrible at eating lunch. Peppers and a scoop of peanut butter is often my lunch. I remember one of my favorite things about the corporate world was lunches. Because I was addicted to food I often spent the morning thinking about what I'd order. Buffalo chicken sandwich with fries and a cheery coke (had to add the cherry for more sugar of course). Holy insulin abuse, no wonder I hit a wall at 3 pm every day. What a blessing it's been to not have those constant thoughts of food racing around in my head. To not be consuming the sugar and grains that lead my body on a crazy roller coaster crashing and burning. Take a minute to view this to see what I'm talking about in this video

3 pm
It's almost time to pick up Jon from school. Treat time for mama.
Old habits die hard but baby steps and at least I've traded the DQ Blizzards for Chocoperfection candy bars. There is something about needing chocolate. It can be a magnesium deficiency that causes chocolate cravings so if that's you you should try the supplement (besides cravings it does so much more check out the book Magnesium Miracle  I love the supplement but I still want my daily chocolate fix in my car at 4pm.

5:30
Dinner time I need to grocery shop but I have boneless chicken out so I decide on a stir fry. Coconut oil, homemade taco seasoning, red, green and yellow peppers and onions. Top this with shredded cheddar and sour cream. Everyone gobbles it up but Sam. He opts for a scoop of peanut butter on a spoon and three bites of just the chicken. He is the kid who will ask for a "bed night" snack a half hour after dinner. Frustrating. Luckily I run a McDonalds ice cream shop (at least in his eyes I do) and I can whip up a chocolate milk shake.

Our "McDonalds Milk Shake"

1 cup heavy whipping cream
2 tablespoon unsweetened cocoa powder
4 tablespoons of Swerve
Unsweetened almond milk to desired consistency and ice cubes

If he didn't eat a great dinner I throw in Jay Robb protein powder 26 grams of protein. Makes me feel better knowing he is getting some protein.

WORST AND BEST

Worst part of my day was finding the empty cereal container on the counter cuz really I don't feel like being in the kitchen today as easy as the process is now that I've learned shortcuts. I don't love to cook every day, I can compare this to exercise. Some days you don't want to do it but you decide to, and five minutes into your workout you are so glad you chose to follow through. It feels good to have made a good choice.

Best part of the day was building a zoo with Sam. Imaginative play with a child is the best even though he tells me what, and how I'm supposed to act, I didn't really want to be a cheetah, I wanted to be a monkey :-).

Best 27 bucks I have spent in a long time...

Dinner at the Chrest house tonight was spaghetti with noodles that all kids would want...super long and green.  Zucchini noodles, but shhhh don't tell my kids.  They absolutely gobbled them up.  I think it was all in the presentation.  I purchased this gadget and it was awesome! My middle son is not such a great veggie eater so this will be something I am adding to the lunch and dinner menu.  They tasted amazing!

  • I also snuck in some green olives (oh, speaking of olives, I found some, stuffed with blue cheese today at Aldi).

SUCCESS

I love to share little success's...we had Isaac's 18 month well baby check today.  Isaac has always fallen in the 20th percentile for height.  Through research I have read that gluten can prevent growth in children.  I wondered if Isaac just had the genetics to be a short kid or if it could have anything to do with his diet.  Well today he was in the 69 percentile!  I told my super supportive pediatrician about reading about the correlation and he was very interested because as he stated they don't normally have that kind of jump in height when trending consistently.  Woot Woot! Here is just one of many articles on the subject  http://www.glutenfreesociety.org/gluten-free-society-blog/new-study-shows-how-gluten-stunts-growth-in-children/






DOUBLING UP

I was a machine in the kitchen today.  I hammered out two batches of goldfish crackers (I did not cut out into goldfish shapes, I'm not crazy), two batches of graham crackers and a 9x batch of cereal.  I wish I had a commercial oven.  I have told you this before but DOUBLE your recipes.  It saves sooo much time.  Invest in a Food Saver.  For instance, you have to grate all the cheese for the crackers.  Well, I grated a huge block from Costco and then measured it out and put in bags to save myself that step next time.  Same with the mixed nuts for the cereal.  I ground up a large bag from Costco of Almonds, Walnuts and Pecans (that is a lot of nuts) but now, throwing my cereal together every two weeks is easy peasy cuz that was always a lengthy step.  The longer you follow this way of life the wiser you get with prep.  If you are going to stay on track you have to be prepared.  You have to have the good food in your house otherwise you reach for the crap.  However if I had my way your cupboards would be completely empty of any nasty food :-)  My babysitters no longer love to babysit at the Chrest's.  However my last sitter totally dug my chocolate chip cookies.  Woohoo, success with a sugar and wheat eater. 

EASTER FOR US

I hope you had a blessed Easter. We ended up going out for brunch so no one had to cook.  One question I get asked a lot is "how do you go out to eat eating this way".  Super easy my friends.  Most restaurants have a gluten free menu.  I know, you are saying, "but Joy, you said we are not supposed to fall into the gluten-free trap". Yes, that is true but you know what products those are (breads, pastas, starchy veggies).  So with that being said when an item that doesn't fall into those categories shows up on the gluten free menu they are a safe bet.  It just means that you don't have to fear having wheat put in your dinner.  Seasoning they use etc. doesn't contain wheat. 

Example: Orchard gluten free menu was this: Made to order omelets, eggs, bacon, sausage, broccoli salad, green beans, fresh fruit, hash browns, chocolate covered strawberries.   Great choices.
I had a huge everything omelet, loads of bacon, a little fresh fruit, green beans, and a small portion of broccoli salad (however it tasted crazy sweet, so def sugar in that bad boy).  I didn't miss the other choices one bit.  I now see that other food, (rolls, French toast etc.) for what it is.  I know I can make those things the right, healthy way at home if I want them.  Going to a brunch and not feeling deprived is liberating.  Not craving the junk is life changing.

On Weight Watchers I would have been figuring every little point and end up pissed that I couldn't have cheese in my omelet cuz that might push me over the point level.   I on the other hand have no idea how many calories I consumed on Sunday and I DON'T CARE!!!!! I also know that the scale won't go up the next day.  It remains stable, other than hormone fluctuations throughout the month. 

WORLD'S BEST PEANUT BUTTER EGGS! 

I know there is a lot of candy at Easter but I was super mommy and got my kid packs of xylitol sweetened gum for the baskets and then I made the WORLD'S BEST PEANUT BUTTER EGGS! They deserve all caps. They were simply amazing. Do not save these for a holiday. Make them soon! My kids adored them and so did everyone else that I shared with. Mega peanut butter and just pure goodness. It felt amazing not stuffing my kids baskets with high fructose corn syrup and nasty dyes. If this sounds radical, don't worry through this health journey you are on you will continue to learn what gets put into our food and knowledge will be your power to not want people you love to consume this stuff. 
So mine aren't gorgeous but really, it didn't matter.  The picture below the eggs is my chocolate that slipped out of my hands.  I'm so glad they were totally worth it.

Grocery List...

I am so happy that so many of my friends and family (oh and you that I don't even know ;-) have decided to embark on this journey.  Getting started with shopping can be overwhelming and feel expensive.  I am going to give you a shopping list and where I purchase my products. agree or disagree with items listed but these are the things I purchase for my family while following a grain/sugar free lifestyle. If you know of places with better prices please share. (I apologize if some of the sources I list are not in your area as I realize some of you do not live here in MN that are reading this.)

IS IT REALLY MORE EXPENSIVE?

I also want to address the cost issue.  Getting started can feel expensive but once you get the hang of the style of eating you will find that buying in bulk can save you a lot of money and you and your family will be eating less of the junk, thus saving on all the prepackaged convenience foods.  Also, I encourage you to look at the whole picture.

Look at the money you will save in Dr. visits and over the counter medications.  Other than supplements we have spent $0 on prescription medication and dr. visits in the past 3 months.  The $40 I was spending monthly on asthma inhalers for my son can now buy us 8 lbs. of almond flour.  I don't know about you but I'd rather ditch the medications and spend the cash on yummy, healthy food.  I don't have my $15 cost for anti-depressant, $12 spent on Motrin every month, random money on kids over the counter meds, etc.  Many of you that read this have stopped taking your prescriptions because you health is so amazing so I encourage you to factor in those costs when you are figuring out your food budget. 

So first I will list the basics you should have on hand and then I will list where I purchase these.  Obviously you don't have to go to all of these places but if you are looking to save it's what I do.  I again, buy in bulk whenever I can to save myself time and money.  I then only need to pick up produce, dairy and maybe some meat on a weekly basis.

OUR GROCERY BASICS


  • Almond Flour (blanched preferably, just cuz it tastes better :-)
  • Coconut Flour
  • Psylium Husk (for Maria's sub bread, a favorite bread option for most)
  • garbanzo bean or chickpea flour if you are doing Wheat Belly breads
  • vanilla extract
  • unsweetened cocoa
  • aluminum free baking powder
  • baking soda
  • dark chocolate chips or baking bar
  • Raw nuts (make sure if buying dry roasted they are free from oils)
  • Sunflower seeds
  • Pumpkin seeds
  • Sweetener of choice. I prefer Swerve but you could do Stevia (not Stevia in the Raw because it has maltodextrin and dextrose) or Truvia, I DO NOT recommend Splenda)
  • Sweet Leaf stevia drops (they come in many flavors but i love the vanilla cream)
  • Peanut Butter (all natural)
  • Jay Robb Whey protein powder, vanilla and unflavored (could do egg white if dairy allergy)
  • Eggs
  • Cheeses (not processed)
  • Greek full-fat yogurt if you are gonna do yogurt, this is unsweetened, you can sweeten at home (still a few grams of sugar though, but best choice overall)
  • Heavy Whipping Cream
  • Cream Cheese
  • cottage cheese
  • sour cream
  • UNSWEETENED almond milk, can be original vanilla, or chocolate
  • coconut milk ( I like canned)
  • Butter!!!
  • Coconut oil
  • olive oil
  • bacon
  • gluten free deli meats
  • grass fed hot dogs (my kids love these)
  • meats (no limits on this variety as long as not sugar added, pork, chicken, beef, lamb)
  • veggies (low starch, so not potatoes)
  • low sugar fruits (stay in berry family for adults but can do variety for the kiddos)

I loved these graham crackers and so did kiddos.  I used Nature's Hallow honey in place of real honey.
I also made my traditional chili recipe and let's just say I ended up preferring it without the beans.  Yummy!!  Tons of sour cream and cheese on top.  Delicious!!!

Grain-Free Gluten-Free Graham Cracker Recipe

Preheat your oven to 350 degrees Fahrenheit.
In a bowl, mix together:
  • 1 3/4 cup coconut flour
  • 1/2 cup almond flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 tsp cinnamon (Liz used 1, but I thought it needed more after tasting the dough.)
In your stand mixer, cream together:
  • 3/4 cup room temp butter (Liz uses part butter and part solid coconut oil, but my coconut oil is melted at room temperature these days, so I used all butter)
  • 1/4 cup sugar
  • 1/4 cup raw honey
  • 1 tbsp vanilla extract
  • 3 eggs
Then add the dry ingredients to the wet ones and combine until a dough forms.
Make dough into two balls and place each one on a parchment-lined cookie sheet. Put waxed paper on top, roll the dough out thinly, and remove the waxed paper. Cut into crackers with a pizza cutter and make little holes with a fork – Liz said that will make them bake more evenly, and I believe her.
Bake 10 minutes, then remove and cool. I just lifted the whole piece of parchment off and placed it on the counter top to cool, but if you want, you can put your crackers on cooling racks.
Eat.

These were a nice change from almond flour pancakes. I like to put frozen berries on the stove with some swerve added and make a berry syrup.  Then whip up real whipping cream for topping.  MMMM  So I didn't do the sauce she has below.

It gets easier...

We have become so conditioned that we need sides with every meal and that convenience is king.  I have talked to many of you these last couple weeks who are finding that it is hard to keep up with all of the baking and recipes.  I'm here to tell you that it gets easier.  This doesn't have to be complicated.  It's shopping the outer area of the grocery store and eating whole, raw, natural food.  This leads me to my next point.  If the junk isn't in your house it's not an option for you or your family.  I get that it's hard to donate the stuff but if it's not there you aren't eating it.  Sure a box of Mac-N-Cheese makes for an easy dinner but so does a roast that has been in the crock pot all day along with some veggies and full fat dressing.  Or cooking a few eggs and bacon doesn't take long.  Many of you haven't loved all of your recipes you have made.  You are going to soon have a "go to" list of favorites though.  You will double those and make life easier.  We love the Wheat Belly Wild Rice soup and it was a blessing to just pull out the double batch I made a month ago and have it for dinner tonight.  So, as fun as the baking is and trying to find all the "Healthified" versions of your favorite foods I just encourage you to take a break from that if you are feeling overwhelmed and just start eating whole foods.  Lead your family by example.
My kids open the cupboard and grab nuts or some cereal I made.  Otherwise they open the fridge for cheese, deli meat, veggies or some fruit.  Granted at first we all were opening the pantry and looking for that box of crackers or some cookies, or going to the turn table to find a canned soup or spaghettio's.  It's what we have done all of our lives.  But it's like anything, change is not easy but once you do it it becomes second nature.  I'm so glad I'm not raising my kids to just open a box or a can to get their food.  Stop, pick up one of those boxes and read the ingredients.  Seriously, you couldn't pronounce them all could you?  You probably were or am just like I once was and would say "oh, well there could be worse stuff".  That's where we are wrong.  This whole lifestyle change is one of education.  I challenge you to take the time to read up on those ingredients and what they are doing to your and your family's bodies.  You will be disgusted that you have just bought into what is put on our grocery shelves.  If it says "natural" it's good for you right?  Every day, I read from friends and complete strangers how this dietary change is transforming people's lives and health issues are gone!  It's not coincidence. It only makes sense.  Stop putting the yuck in, and your body is going to change.  We were not created to eat the foods that scientists have created. 
I get that this blog post is blunt and sounds easier said than done.  Maybe it's because I have been doing it for months but once you fully detox your body and your kitchen it just gets a whole lot easier. I was talking to my bestie tonight who has also been following for months and she too said that her desire to bake has really gone downhill.  She just flat out enjoys the whole foods she is eating and doesn't crave or need those things anymore. 
 Don't kill yourself in the kitchen trying to make things that taste exactly the way the crap you once ate did.  Do however, savor and enjoy  the wide variety of food you can enjoy and instead of dreading cooking in your kitchen embrace it!  When you first get started I completely understand your want and desire to keep a "normal" way of eating for you and your family.  Go for it but please don't let the cost of baking the deserts and breads or the possible rejection from your kids be the reason you throw in the towel. 
Just recently I was laughed at for how I lost all my weight and then told "Well that sounds totally complicated and not enjoyable".  Instead of being defensive I gave a brief explanation of what I have done and that is it.  I'm completely convinced that my friends that are hitting their heads against the wall with counting calories, doing a new diet every few months and gaining and putting back on the same 15-20 lbs will finally say enough is enough and be set free like I have been. 
I love the food my family eats, I love the way my body feels.  I never knew that God designed our bodies to feel this amazing.  I thank Him for that. 
So let me encourage you that this way of life does get easier.  Also, don't get me wrong that I do love to make new recipes and it's super fun to try them.  Sooo, here is one my friend Nichole and I made together over the weekend. Super Yummy!

Chocolate Bundt Cake with Stout Caramel Sauce – Low Carb
Yield: 12 servings
Chocolate Bundt Cake with Stout Caramel Sauce – Low Carb
A low carb, dark chocolate bundt cake drizzled with a rich sugar-free stout caramel sauce. Perfect for any celebration.
Ingredients
    Cake:
  • 2 cups almond flour
  • ¾ cup cocoa powder
  • ¼ cup whey protein powder, unflavoured
  • 1 tbsp instant coffee
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter, softened
  • ¾ cup Swerve Sweetener or granulated erythritol
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup almond milk
  • Caramel Sauce:
  • 1 cup gluten free stout beer
  • ½ cup powdered Swerve Sweetener or powdered erythritol
  • ½ cup xylitol
  • ½ cup whipping cream
  • 2 tbsp butter
  • ½ tsp vanilla extract
  • ¼ tsp plus 1/8 tsp xanthan gum (an odd amount but it's the best way to write it)
Instructions
  1. For the cake, preheat oven to 325F and grease a large bundt pan.
  2. In a medium bowl, whisk together almond flour, cocoa powder, whey protein powder, instant coffee, baking powder, baking soda and salt.
  3. In a large bowl, beat butter and erythritol until well combined. Beat in eggs and vanilla extract.
  4. Beat in half of the almond flour mixture, then the almond milk and then the remaining almond flour mixture.
  5. Spread batter in prepared pan and bake 40 minutes, or until a tester inserted in the center comes out clean.
  6. For the caramel sauce, place stout in a heavy saucepan over medium heat. Bring to a boil and continue to cook for 7 minutes, to reduce.
  7. Stir in powdered erythritol and xylitol, and continue to boil until mixture thickens and becomes slightly syrupy, about 7 minutes. Mixture will smoke.
  8. Remove from heat and add whipping cream and butter. Mixture will bubble vigorously.
  9. Stir in vanilla extract, then sprinkle with xanthan gum and whisk quickly to combine.
  10. Let cool half an hour, then pour over cake. Alternatively, drizzle over pieces of cake before serving.
  11. *Caramel sauce will begin to crystallize a bit when exposed to the air. Store in an airtight container and give it a few seconds in the microwave to warm just before serving.
Notes
Serves 12. Each serving of cake has 7.5 g of carbs and 4 g of fiber. Total NET CARBS for the cake = 3.5 g. Each serving of caramel sauce has 4.6 g of carbs. Total NET CARB count for the whole dessert is 8.1 g.

Easy post but oh so rewarding to write

Easy Peasy, Lemon Squeezie, as Jon would say.

 This blog will be super easy as I get to copy and past a couple of testimonial I got this week from people following this way of life! 
I love these emails.
I also love the recipe below for buns.  They are super versatile.  I invested (only $8) on a muffin top pan to make these.  And it rocks, it also rocks for the oopsie rolls my kids love.  Normally I would never spend money on something that has the words muffin top in it :-)  This however is an approved product. 
Have you bought chia seeds yet?  They were one of the first staples I bought for my cupboard and threw them into smoothies a few times.  Well my boys love pudding so on Saturday I came up with a little concoction and it was awesome.  I'll give you the ingredients but that is about all I can give as I just did it to look and taste. 
Would it be helpful for me to put together a shopping list for you?  Let me know.  I know I place links here for where I buy some things but I could maybe put together a list.  Although the initial investment can seem big, I have found it way less maddening to get the staples and stock my cupboards and then just do a weekly shopping trip for meat, dairy and veggies.  Even some of that I buy in bulk at Costco and use my handy dandy Food Saver.  I highly recommend that investment.  I know it has paid for itself already.  Just ask my hubby, I make a big announcement every time I use it.  Just need to confirm it's value honey.  I feel so blessed that the man I love and adore loves this lifestyle as much as I do.  I think maybe he just secretly enjoys the fact that I cook so much and make sure he has a lunch packed every day of the week.  No, in all seriousness he loves the changes he has felt and seen in our entire family.  Maybe I'll let him guest blog one of these days.  He is pretty funny and could certainly add some humor to this "Yup, We Willingly Chose This For Our Family". 
Have a great week.  We are enjoying spring break at our house.  Off to Chuck E Cheese in the morning.  Glad we have a real good excuse now to not eat that crappy pizza.  The Wheat Belly Pizza Crust #1 in the cookbook far tastes better than most pizza joints.

Testimony #1

A year ago, where I will begin this story, I found myself frantically racing to urgent care with my four year old son after a seven day stint of tummy aches. They had intensified to a point where he was doubled over in pain. The urgent care doctor was “befuddled” (this was his term) by the presenting symptoms, mentioned a few possible diagnoses and sent me on to the emergency department for “imaging.” On the way I took a chance and put in a call to a friend of mine who specializes in nutrition. With all the assertiveness of a panicked mother, I told him I would be in his office in ten minutes with my very sick son…could he give me a second opinion?! It took him ten minutes to diagnose that eating gluten was the source of my son’s problem AND give him a homeopathic remedy that gave instant, temporary relief!
God’s grace is a beautiful thing. I recently read in Wheat Belly, by William Davis that it often takes the traditional medical community several years to pinpoint this diagnosis. We were not out of the woods yet, but I could see that we were on the right track. For the next two weeks we worked intensively to get the rotting, indigestible wheat to move through his system and stop causing tummy aches. To be honest, I had put the whole “gluten-free” movement into the same category as all other so called healthy fads that will prove to be non-sense in the long run. As a carb addict myself, how could I come to any other conclusion? This situation started to shake me out of my wheat induced slumber. The second wave of panic came quickly. What will I feed my son? With gluten off the menu, a fridge full of frozen pizzas and a pantry full of mac-n-cheese, lunch seemed nearly impossible! With some quick and not so brilliant study, I soon discovered two things:
1. Forward motion would require more home cooking, less convenience…TRUE.
2. All I had to do was replace my current wheat flour with a gluten free mix of cornstarch, tapioca starch and rice flour…FALSE, FALSE, FALSE!
This plan did take care of tummy aches for my son, but lead to weight gain for me, despite my love for endurance running. It did NOTHING for the overall health of my family. Yet, I did get to keep one of my closely held possessions, my addiction to the riding the carb roller coaster that left me constantly hungry and searching the corners of my pantry for any bit of sugar or carb heavy food every two hours like a crazed maniac. Watch out if I could not have my carb fix…Cranky Mama!
Actually, I had had moderate success managing my weight with low carb dieting and running. I had
learned one very important thing through that process; managing my weight was about managing my
blood sugar cravings. When on a low carb diet, I would easily walk by any carb heavy food without
a problem. As soon as I reintroduced carbs into my diet, there I was back on the unstoppable roller
coaster of intense cravings and weight gain. I had no idea low carb eating could be a part of a healthy
lifestyle and that I didn’t have to endlessly wrestle with my weight and the tyranny of cravings every two hours of every day!
I had been talking with Joy Chrest a little bit about gluten-free eating and she was having a lot of success with her weight. One day she posted on facebook that Dr. Oz was featuring Dr. William Davis author of Wheat Belly and watched it. I was blown away by the fact that for some people whole wheat bread can increase blood sugar more than eating a candy bar. I don’t need a blood glucose “thingy” to know that that is me! I bought his book and learned so much about wheat. It is billed as a weight loss book, but the information really helped me understand why my son struggled as he did at such a young age and why it became such relentless tyrant in my own experience. Further, I have a daughter who is eight and can clearly see that I was setting her up for a lifetime of struggle with food. In addition to the nine pounds and four inches I have lost in my mid-section, I am sleeping better and full of energy. In the interest of balance, I do have to mention that there has been a transition period for me. Removing grains from my diet initially left me fatigued and a little depressed. But, as my body has transitioned to one that burns fat for fuel vs. one that burns sugar and stores fat, I have slowly but surely felt more vibrant and healthy with each passing day. I sleep so well. The dark circles under my eyes and Rosacea tint of my skin have morphed into a healthy glow. Also, I actually taste the flavors in food now and I feel like that rat in the Disney movie Ratatouille-I get to cook every day for my family of five, what a pleasure!
May I tell you a little more about my son? Everything has changed for him. He has gone from a quiet,
pale faced, small for his age, low-energy kid and is now a vibrant healthy boy with wild dreams of
becoming a kung fu master and energy to burn. I’ll take the challenge of raising a strong, growing,
climbing, wild eyed energetic boy over the listless passivity of chronic fatigue any day! Praise God!
So many people suffer with wheat/grain fueled health issues and don’t even know it. It’s crazy! For us, the tummy aches helped us connect the dots more quickly. What about those who suffer with asthma, behavior and attentiveness problems, depression, skin conditions, etc? I say-take on the challenge of replacing your grains and sugar with healthy sugar substitutes and healthy fats-I know it’s a big step and have felt overwhelmed with of planning those first few grain free meals-not easy, but worth it!
Joy Chrest, Maria Emmerich, Dr. William Davis are all a wealth of information with feet on the ground recipes and shopping tips. Sit in their pocket and soak it up like a sponge. Every time I am around Joy,I come home and explore ingredients, recipes and ideas she has shared with me. What a blessing! Hi joy! Love your blogs. Always keep me motivated! I am fully committed to this now so buying food, cooking, etc... Has gotten expensive and consuming and I start to get defeated not to mention most people still think i am crazy :-) but your blogs bring me back to why I am doing this! So frustrating how the "junk" is so cheap! Funny though I have not been in the middle aisles for awhile now! I have found local health store that has enough of the meats and have some great products in their organic section which is helpful! Not a great selection, but enough.

I would like to share my story with you and don't ever share this so it is a little hard for me. I am new to this eating lifestyle and don't have a lot of input but I can tell you my story a bit. I wanted to try this not so much to lose weight but because the addiction to food and the anxiety that comes with it i knew was so unhealthy. My life has been consumed by food for 20 plus years. Between Eating disorders, binging, snacking at night when no one else was around, it got very tiring! The guilt of what i was doing to my body became overwhelming. I finally started praying a lot about this because I knew God really could only direct me and I saw your posts on Facebook which led me to Maria emmerich. What a change in so little time. I lived fat free low calorie for so long letting it go was hard! But I no longer sneak those snacks and have the guilt, I am FULL after a meal or 1 snack! That has never happened! It is such a feeling of freedom. And no more bloating, I am working on no longer needing anxiety medication, and I have had hypothyroidism for years and I am going in next week to get my bloodwork checked as they think it might be changing since when I am off my meds I feel better than when on them. My daughter has dealt with anxiety since she was 3 and they talk about meds, etc..... But I am slowly working on switching her to the "free" lifestyle and we can notice a difference when she has been on my food versus getting all wheat/sugar. She is calmer, less resistant, can handle situations better. Hoping to be able to change her diet completely and see what happens! I am excited for her!

Finally, a grain free bread that holds up to your favorite sandwich!
Like most people, I LOVE BREAD!!!! It is such a convenience food! Growing up my dad used to say that you can "jam" anything in between 2 pieces of bread and call it a meal. We did this with everything from tomatoes, bananas, homemade sweet pickles (this was a favorite) as well as a good ol' pb & J and of course, burgers. I am so happy that I don't have to deprive myself of bread even though I have given up wheat and the Bunny Bread of my childhood! These sandwich buns are so easy and convenient and can be used in place of regular bread for any of your favorite sandwiches!


After giving up wheat and all grains, I quickly began to seek out a grain free bread alternative. I was inspired by Elana's Pantry's "Paleo Bread" http://www.elanaspantry.com/paleo-bread/. I love her recipe for bread but wanted a bread that didn't taste like coconut or any other nut. I also wanted something that could hold up to a juicy burger. Every bread I have tried usually held together at first then just crumbled in my fingers making a big mess, especially if it contained something warm like a burger and sauce. I would then make the bread slices thicker and that was just too much bread. Preparing the bread in "buns" solves the problem of soggy bread and it allows the bread to maintain its structure while eating a sandwich. So the end result is something you stuff with your favorite fillings, pick up and eat with one hand! Carefully slicing it in half and toasting for just bit only makes this bun more durable and delicious!


Yes, there are quite a few ingredients in these buns. The combo of almond and coconut flour with flaxseed meal help give it the right feel and texture. The addition of vanilla and stevia give it just a bit of sweetness trying to mimic the taste you would get from a traditional loaf of bread.
Top with Sesame Seeds before baking
I think this recipe is pretty simple. You don't even need a mixer or blender. I did all of my mixing with a whisk and it comes together fast but you will need an ice cream scoop and a muffin top pan. The muffin top pan allows more surface area to brown giving the bun more structure. The ice cream scoop ensures the buns are the same size as well as the right shape so that they bake evenly, not lumpy. The muffin pan also helps give the buns a consistent size and shape. To make sure the buns cover the entire bottom of the muffin top pan, hit the pan on the counter top 2 times and turn the pan and hit another 2 times. Yes, I am serious. If you don't, the buns will be small in diameter and rise too high and become thick. If you try to flatten them with a spoon or knife, they will be lumpy. If you hit the pan on the counter, this will also force out any air pockets and spread out the batter.


I also love that making this bread recipe as buns speeds up the cooking time. Cooking time is only 12-15 minutes! As soon as the first 6 sandwich buns come out of the oven, transfer them to a cooling rack and pop in your next batch. I didn't even need to use any type of butter or oil for the pan but you can if you are concerned your pan may stick. So in 45 minutes "tops" you can bake 18 buns which is the equivalent of 36 pieces of bread!

Store in refrigerator for 1 week in a plastic container, separating each bun by a layer of paper towels to prevent moisture from making buns soggy. When ready to eat, carefully slice in half (or do this before storing in the refrigerator) with serrated knife or use a bagel cutter and eat cold or my favorite is to pop the bun in the toaster on the lightest setting. Be careful of going too long in the toaster because the high fat content will cause the edges to burn very quickly.


Another thing that I like is that these buns are portable! Slice the bun in half and place in a sandwich bag and take it with you and use your grain-free bun and leave the restaurant's bun on your plate! So now that poor hamburger can have a bun, even when you go out! I really do this! ;-)
Freeze in an airtight container, perhaps wrapped in paper towels inside of a small sandwich bags. They should last a couple weeks if not longer in freezer. Just pop in the toaster when ready to eat or microwave for a few seconds to thaw.



Now, go enjoy your favorite burger or sandwich or treat the bun like an English muffin and spread it with cream cheese or butter and your favorite no-sugar preserves. The possibilities are endless!

Melissa's Sandwich Buns
Makes 18 buns


Dry Ingredients
3 cups almond flour (10 oz by weight)
1/2 cup coconut flour (2 oz by weight)
1/4 cup ground flaxseed
1 tbsp plus 1 tsp baking soda
1/4 tsp Kal Brand Stevia
1/4 tsp salt (if not using salted butter)


Wet Ingredients
2 tbsp Vinegar
1 tsp vanilla
1/2 cup heavy cream
1/4 cup water
8 eggs, well beaten
1/2 cup butter, melted


Optional topping: Sesame Seeds
  1. Preheat oven to 350 degrees.
  2. In bowl, mix dry ingredients.
  3. Add vinegar to dry.
  4. In separate bowl, blend all remaining wet ingredients well.
  5. Scoop batter into muffin top pan using ice cream scoop.
  6. Hit pan on counter top 2 times then turn pan and hit 2 more times, this produces a more even thickness and gets out air bubbles!
  7. Bake for 13-15 minutes then remove and cool on wire rack.
  8. Store in refrigerator for up to a week.
  9. To serve: Carefully slice bun in half using serrated knife (or bagel cutter). Toast on lowest setting to extra strength.
Note: I recommend slicing in half before storage in the refrigerator to make these Sandwich buns convenient for the kids.
Nutrition:
Each Sandwich Bun: A little over 3 carbs
Regular whole wheat bun: 16-25 grams of carbs

Chia Seeds
Mix up with blender, should be a bit runny because the chia seeds are gonna grow and will firm up the mixture.  Refrigerate a couple hours or over night.  Enjoy.

Ingredients
  • 3 large eggs
  • 1 dash salt
  • 1 pinch cream of tartar
  • 3 ounces cream cheese

Directions

  • Preheat oven to 300 degrees.
  • Separate the eggs and add, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients together.
  • In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture).
  • Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites.
  • Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.
  • Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.
